TTB has approved 9 recipe/formulas thas far, and we have 8 more either pending approval, or being submitted over the next several weeks.

Here's what's approved currently:

• Desire -- What started this endeavour, it's a 16.7% ABV "Speciality Wine", made with 70% Honey, 10% Black currant, %10 Black Cherry, and 10% Blueberries.  This mead took Best of Show at the 4th New England Regional Homebrew Competition.  It's a sweet, dessert-like mead, that will pair well with any meal.  Caution ladies this one is going to curl your toes, and make you think "Where have you been all my life!"

 

• Coffee In Bed -- Another award winning mead, making it into the top 6 out of 383 entries at the New England Regional Homebrew Competition.  This "Speciality Wine" has 15.3% ABV, and is made with honey and 100% Sumatra Coffee.  There's nothing like Coffee In Bed, ;-)  

 

• Admiration -- A soft and flavorful melomel, one 54 gallon batch has 216 lbs of Wildflower Honey, and 84lbs of Boysenberries. This wine ended up tipping the scales at 16% ABV, we think that the name fits, it's an object of wonder and esteem; a marvel.  Enjoy with passion and care.

 

• Embrace -- A Specialty Honey wine made from 63% Honey, and 38% Black Currant juice, this semi-sweet mead is 15.7% ABV.  Embrace is the start of more things to come, so relish this treasure and find someone to enjoy the passionate embrace.  Blackcurrants dominate the flavor profile, hiding the honey, this mead will reset your expectations of what a mead is or can be.

 

• Kisses -- As delicate as a kiss, this honey strawberry wine is sweet and long lasting.  The strawberry is ever so lightly represented against the floral flavors from the honey.  This wine we recommend serving slightly chilled, but not too cold  as to mask the strawberry flavors, at 15.3% ABV this one is sure to sell out.  Our first batch is extremley limtted only 12 gallons were made.

 

• Bliss -- Oh the name says it all, you will want to keep all this mead to yourself, but don't, it's so wonderful to share and see the blissful joy on someone's face who hasn't tried mead before.  While we would love to keep our recipes a secret, we are mandated to disclose that Bliss is a Specialty Wine made from 68% Honey, 13% Black Currants, 13% Black Raspberries, and 13% Blueberry.  Bliss has 15.2% abv. It's a sweet, dessert-like, wine, we recommend serving with cheese, such as apricot stilton.

 

• Paramour -- For the sake of love, what a beautiful name that reminded me of my mother's passionate, creative cooking skills.  This Specialty wine made from 63% Honey, 13% Blackberry, %13 Blueberry, 5% Black Cherry, and 5% Black currants, is wonderfully complex.  The honey plays a supportive note, and quite frankly is overshadowed by the deep berry notes.  At 16.7% abv. share this mead with loved ones. 

 

• Sensual  -- Other than Standard Honey Wine, in other words it's unquie, and that's our goal.  To create wonderful adult beverages unlike any other.  Sensual is a wonderful, simple blend of honey, yeast and water.  It's a showcase for the complex nature of honey, this mead has 15.3% abv.  Pairs well with any dish, or just enjoy the moment and let it sensual.

 

• Breathless  -- Other than Standard Honey Wine with Natural Flavor.  This unique mead, features loads of cinnamon, it's going to make your tongue tingle.  Serve chilled, this 15.3% abv. wine makes for a great dessert.
